Edible locusts (Locusta migratoria manilensis Sp.) are a delicacy in some parts of Thailand. They are commonly prepared by frying in oil and seasoning with soy sauce and pepper. Thailand Unique raises its locusts on GAP-certified farms. They feed them a diet of fresh perennial ryegrass. They are raised clean and hygienic and processed at their HACCP and GHP-accredited factory. They are 100% natural and do not contain preservatives, artificial colours, or flavours. Their locusts are regularly lab-tested to ensure they meet international food safety standards.

Locusts are a good source of iodine, phosphorus, iron, thiamine, riboflavin, and niacin, and also contain traces of calcium, magnesium, and selenium. They are low in carbohydrates, making them suitable for Atkins and Paleo diets. Some people have described cooked locusts as having a flavor similar to smoky bacon.

Locusts are just as nutritious as, or even more nutritious than, regular meat. They contain omega-3 and 6 fatty acids, as well as other sterols that are important for preventing heart disease. Additionally, they have low cholesterol levels. The amino acids lysine and methionine in locusts are 4–6 times higher than those found in regular meat. Locusts are also high in calcium, iron, zinc, and vitamins D3, B12, E, and A. They can be used as raw materials for chitin, oil, and nutraceutical products. Efforts are being made globally to establish policies and regulations to support the production, use, and trade of locusts and other edible insects.
